It’s Superfoods Month here at Everland and we are excited to share this recipe for Vegan Chocolate Coconut Chunk Ice Cream 🍦⁠

Did you know that coconut is an excellent superfood? The unique combination of fatty acids in coconuts may have positive effects on your health, such as boosting fat loss, heart health, and brain function

Here’s what you need

Ingredients:

💧 3/4 cup water⁠

🥥 Cup Everland Coconut Flakes⁠

🥛 1 1/4 cups Everland Coconut Milk⁠

🍬2/3 cup Everland Organic cane sugar

🤎 2/3 cup Everland Unsweetened cocoa powder⁠

🌊 1/4 tsp Everland Sea Salt⁠

🍫 6 ounces Everland Chocolate Bark of your choice (finely chopped // ~1 cup chopped per 6 ounces)⁠

🌸 1/2 tsp Everland Pure Vanilla Extract

Instructions:

  1. Place the coconut milk, sugar, and vanilla in a blender. Blend until combined, about 30 seconds.

  2. Freeze using an ice cream maker, according to manufacture’s instructions. During the last few minutes of churning, add in the chopped chocolate and coconut. You can serve immediately for a soft serve texture or you can place the ice cream in a container and freeze for a firmer texture.
